Flavor: Roasted Garlic

Roasted Garlic · Savory

Sweet, slow-roasted garlic

Slow-roasted garlic, sweet rather than sharp. It does the work of a whole sauce base in a few drops, without the bite of raw garlic or the flatness of powder. Into pasta, over pizza, through a vinaigrette.

[ Mahnaz's novel creation ]

Not an infused oil.
A concentrate.

Mahnaz's estate olive oil
+
One intense flavor
=
A concentrate you add to taste

An infused oil is made to be poured, so its flavor is mild and fixed. A concentrate is made to be added. A few drops carry the whole flavor, so you decide how strong: a whisper of truffle in a vinaigrette, or enough Persian Lime to taste across the table. It works with any olive oil, ours or the one already in your kitchen. Each bottle comes in its own small box.

[ The ten ]

One for every kind of cook.

Black Truffle

Black Truffle

Deep, earthy and savory, with cocoa and roasted nut underneath.

Try itOn everything. The flavor that makes people ask what you did differently.

Meyer Lemon

Meyer Lemon

Sweeter and softer than lemon. Warmth where other citrus brings acid.

Try itIn a cocktail, over roasted chicken, through a vinaigrette.

Roasted Garlic

Roasted Garlic

Slow-roasted, sweet rather than sharp. None of the bite of raw garlic.

Try itIn pasta, over pizza, through a vinaigrette.

Hickory Smoke

Hickory Smoke

Savory and subtly sweet, with a buttery, charred depth.

Try itBackyard-grill flavor without an open flame.

Fresh Basil

Fresh Basil

Green and unmistakably summer, held at its peak.

Try itOver burrata, through a finished pasta, across sliced tomatoes.

Rosemary

Rosemary

Herbaceous, resinous, grounding.

Try itOn roasted vegetables and braised meats.

Tuscan Herbs

Tuscan Herbs

Oregano, basil and thyme together.

Try itIn bread dough and finishing sauces.

Persian Lime

Persian Lime

Floral and softer than ordinary lime. A nod to the heritage at the heart of the house.

Try itOver fish, in cocktails, on fresh fruit.

Jalapeño

Jalapeño

Bright, clean heat. A little goes exactly as far as you want.

Try itIn a cocktail, over eggs or avocado.

Chocolate

Chocolate

Dark and complex, not sweet.

Try itA few drops in espresso, over ice cream, into a mole.

[ At the table ]

A finishing oil,
a drop at a time.

A few drops from the dropper into a little olive oil make a finishing oil in seconds. Or skip the dish and go straight to the food.

Swirling a few drops of Persian Lime concentrate to coat a chilled martini glass
[ In a glass ]

The vermouth trick,
with olive oil.

Bartenders rinse a martini glass with a little vermouth before they pour. Do the same with a concentrate: two or three drops in an empty, chilled glass, swirled until the inside is coated, then pour your martini over it.

The flavor meets you at the rim and softens as you drink. Persian Lime or Meyer Lemon for a gin martini, Jalapeño for a dirty one.

[ Where to start ]

Six ways in the kitchen.

Over burrata

Fresh Basil in a spoonful of oil, over burrata and ripe tomatoes.

Through pasta

Black Truffle, a few drops, into a finished pasta or over eggs.

On warm bread

Roasted Garlic in a dish of olive oil, for dipping.

Over grilled fish

Persian Lime or Meyer Lemon, just before it reaches the table.

In a marinade

Hickory Smoke for grill flavor without the grill. Rosemary for lamb.

On dessert

Chocolate over vanilla ice cream, with a pinch of flaky salt.

[ HOW TO USE IT ]

Three ways in.

  1. A finishing oil: a few drops in a spoonful of olive oil, over bread, pasta or roasted vegetables.
  2. Straight onto food: a few drops on eggs, pizza, soup or fish.
  3. In a glass: two or three drops of Meyer Lemon, Persian Lime or Jalapeño swirled around an empty martini glass before the pour, or Chocolate in an espresso.

[ QUESTIONS ]

Before you choose.

How long does a bottle last?

A long time. You use a few drops at a time, to taste, and the bottle holds a full ounce.

Do I need your olive oil to use them?

No. They work with any olive oil you already have, though each one is made with Mahnaz's own.

How should I store them?

Cap on, somewhere cool and out of the sun.

Is there a set?

Yes. The Concentrate Six is six of them, chosen by Mahnaz, in a black and gold gift box, for $275.

Is shipping included?

Shipping is calculated at checkout from the weight of your order.
